Kohl Rabi Salad
Kohl Rabi is a real ‘whit’s yun?’ vegetable that grows well in Shetland. It is a brassica and the name means ‘turnip cabbage’. I like it because of it’s ‘neepy’ flavour and in this simple salad I have shredded it and mixed it with red skinned apple and red onion. Unlike a turnip it can be eaten raw and it has a good crunch. It makes a light and healthy alternative to coleslaw.
Ingredients
1 medium Kohl Rabi – cut finely or grated
½ red skinned apple – thinly sliced
½ small red onion – thinly sliced
chopped parsley
oil&vinegar dressing – 2tablespoons oil, 1 tablespoon vinegar – your choice.
Ground pepper
Method
Put the dressing in a bowl first then add the prepared vegetables. That’s it.
